The Blue Lake Bean Story

Blue Lake style green beans are named for the Blue Lake area near Ukiah, California where they were developed in the early 1900s. Despite their name, Blue Lake Green Beans are actually quite green. They are the classic "Green Bean" in North America, with a mild flavor, round cross section and crisp, tender texture. They were originally developed for canning, but are a favorite side dish at holiday dinners, or in salads and casseroles.


Bean Nutrition Facts

According the the USDA green beans contain high levels of vitamin A, and many health promoting flavonoid antioxidants such as lutein, zeaxanthin and beta carotene. These compounds help act as protective scavengers against oxygen-derived free radicals that can have negative health effects.

Zeaxanthin is an antioxidant carotenoid that may help promote eye health. And the beans provide other important nutrients such as folates, vitamin-B6 (pyridoxine), thiamin (vitamin B-1), vitamin-C. Consumption of foods rich in vitamin C helps body develop resistance against infectious agents and helps reduce oxidative cell damage.
