The Colorful Artichoke Story

The purple artichoke has a wonderful nutty flavor, and gets its marvelous color straight from traditionally bred, heirloom style seeds. The purple color comes from a type of plant pigments called anthocyanins, part of a family of health friendly molecules called flavinoids.

Artichokes of all colors are relatives of the thistle plant, and originated in the Mediterranean. The name came from the Arabic "al-kharshof", and a Northern Italian dialect word, "articiocco". They were first brought to America by French immigrants in Louisiana, and are now grown almost exclusively on the central coast of California.


Artichoke Nutrition Facts

Studies suggest that a diet rich in brightly colored fruits and vegetables can have important health benefits.

One medium size cooked artichoke (about 120g) provides almost 15% of the USDA daily value of vitamin C, and 41% of the daily value of dietary fiber.

Purple artichokes have all of the nutrition of the traditional green artichoke, PLUS purple pigments called anthocyanins. Anthocyanins are flavinoids that may help increase the antioxidant capacity of the blood and may help maintain good brain function. The tissues of all higher plants contain anthocyanins, which is one more reason why fruits and vegetables are an important part of a good diet.
